Best banana bread

Bestes Bananenbrot: Saftig, aromatisch und einfach unwiderstehlich!
This simple, healthy and quick recipe will appeal to everyone, whether for breakfast or as a sweet dessert.

Ingredients:

  • 2 ripe bananas

  • 150 g wholemeal spelled flour

  • 100 g ground almonds

  • 80 g maple syrup

  • 70g coconut oil

  • 1 tbsp apple cider vinegar

  • 3 tbsp cocoa

  • 1 tsp cream of tartar baking powder

  • 1 teaspoon baking soda

  • ½ tsp vanilla

  • ½ tsp cinnamon

  • 1 pinch of cardamom

Preparation:

  • Melt coconut oil, add apple cider vinegar and bananas and mix everything. Mix the dry ingredients and stir into the dough with the coconut oil mixture and maple syrup.

  • Line a loaf pan with baking paper, pour in the dough and distribute it evenly.

  • Bake the banana bread in a preheated oven at 180°C on top and bottom heat for 40 minutes. Make a sample with a toothpick: If nothing else sticks to it, the banana bread is ready.

Preparation in the Thermomix:

  1. Add the coconut oil, apple cider vinegar and bananas in pieces to the mixing bowl and mix for ten seconds on speed 4.

  2. Add the dry ingredients and maple syrup and stir on speed 3 for 30 seconds.

  3. Line a loaf pan with baking paper and pour in the dough and distribute it evenly.

  4. Bake the banana bread in a preheated oven at 180°C on top and bottom heat for 40 minutes. Make a sample with a toothpick: If nothing else sticks to it, the banana bread is ready.

My dosha tip: Suitable for Pitta and Vata. According to Ayurveda, bananas have nourishing, heavy and cooling properties. For this recipe the bananas should definitely be ripe. In contrast, unripe bananas work well against diarrhea because they have a dry and astringent quality.
