Do you feel tired, sluggish and bloated? Then it's high time for an Ayurvedic detox with Kitchari! This traditional dish made from rice and mung beans is not only easy to prepare, but also incredibly nutritious and easy on the digestive system.

Kitchari: What is that anyway?

Kitchari is a stew made of rice, mung beans and spices that has been used in Ayurvedic medicine for centuries to detoxify and regenerate the body. The light and digestible combination makes it the perfect meal when you're tired, stressed or suffering from digestive problems.

Kitchari recipe - ingredients for 2 people:

  • ½ cup white or whole grain basmati rice

  • ½ cup halved mung beans (yellow)

  • 1 carrot

  • ½ courgette

  • 1 tbsp ghee

  • ½ tsp Ceylon cinnamon

  • ½ tsp turmeric

  • ½ tsp cumin (powder or ground seeds)

  • ½ tsp coriander (powder or ground seeds)

  • Pinch of ginger powder

  • Rock salt

  • Black pepper

  • fresh herbs

Preparation:

  1. Wash the mung beans and rice well in hot water. Cook the basmati rice separately and add salt.

  2. Heat the ghee in a pan and briefly roast the spices. The whole seeds can be roasted for longer like powder. Stir in the chopped vegetables and the halved mung beans, add water and bring to the boil, then reduce the heat and simmer until everything is soft. Add more water if necessary.

  3. Finally, add salt and pepper and garnish with fresh herbs.
