Kitchari – the detox dish


Ingredients for 2 people:

  • ½ cup white or whole grain basmati rice

  • ½ cup halved mung beans (yellow)

  • 1 carrot

  • ½ zucchini

  • 1 tbsp ghee

  • ½ tsp Ceylon cinnamon

  • ½ tsp turmeric

  • ½ tsp cumin (powder or ground seeds)

  • ½ tsp coriander (powder or ground seeds)

  • Pinch of ginger powder

  • Rock salt

  • Black pepper

  • fresh herbs


  1. Wash the mung beans and rice hot and well. Cook the basmati rice extra and add salt.

  2. Heat the ghee in a pot and briefly roast the spices. The whole seeds can be roasted longer like powder. Stir in the chopped vegetables and the halved mung beans, pour in water and bring to the boil, continue to simmer on reduced heat until everything is soft. If necessary, add water.

  3. At the end, salt and pepper and refine with fresh herbs.
