Mungdal-Bolognese auf Dinkelnudeln

Ayurveda meets Italy - a fine combination!

Ingredients for 4 persons:

  • 2 tbsp ghee/sesame oil

  • 1 onion

  • 1 clove of garlic

  • 1 carrot (50g)

  • 50g celery

  • 50 g parsley root

  • 60 g mung dal

  • 400 g chopped tomatoes

  • 1 bay leaf

  • ½ tsp marjoram

  • ½ tsp oregano

  • ½ tsp thyme

  • ½ tsp rosemary

  • ½ tsp turmeric powder

  • ½ tsp coriander powder

  • ½ tsp sweet paprika powder

  • Rock salt

  • pepper

  • 500 g spelled pasta

Preparation:

  1. Finely chop the onion and garlic and fry them in ghee with the herbs. Cut the root vegetables into small cubes and fry them too. Stir in mung dal and spice powder and cover with water.

  2. Cook for five minutes, then add tomato pieces and simmer for another ten minutes.

  3. At the end, season with salt and pepper.

  4. Cook the pasta and serve.

Dosha tip: Mediterranean herbs such as marjoram, oregano, rosemary and thyme should not be missing in a Bolognese. They reduce Vata and Kapha but increase Pitta. Pitta types can counteract this with balancing spices such as coriander and turmeric.
