Ingredients for 4 persons:

  • 2 tbsp ghee/sesame oil

  • 1 onion

  • 1 garlic clove

  • 1 carrot (50g)

  • 50 g celery

  • 50 g parsley root

  • 60 g mung dal

  • 400 g chopped tomatoes

  • 1 bay leaf

  • ½ tsp marjoram

  • ½ tsp oregano

  • ½ tsp thyme

  • ½ tsp rosemary

  • ½ tsp turmeric powder

  • ½ tsp coriander powder

  • ½ tsp sweet paprika powder

  • Rock salt

  • pepper

  • 500 g spelt pasta

Preparation:

  1. Finely chop the onion and garlic and fry in ghee with the herbs, cut the root vegetables into small cubes and fry them. Stir in the mung dal and spice powder and cover with water.

  2. Cook for five minutes, then add tomato pieces and simmer for another ten minutes.

  3. Finally, season with salt and pepper.

  4. Cook the pasta until done and serve.

Dosha tip: Mediterranean herbs such as marjoram, oregano, rosemary and thyme are a must in a Bolognese. They reduce Vata and Kapha, but increase Pitta. Pitta types can counteract this with balancing spices such as coriander and turmeric.
